Description:

Raffinose pentahydrate is a trisaccharade composed of galactose, fructose, and glucose. It is hydrolyzed to D-galactose and sucrose by the actions of D-galactosidase. Raffinose has applications in cryopreservation, where it is used to provide hypertonicity for cell desiccation before freezing.
